Rhubarb Tom Collins

To craft a classic Collins with a fresh seasonal twist mix:

1.5 oz gin or vodka

1 oz Rhubarb Honey Shrub

1 oz lemon juice 

3 oz soda water

In a tall glass filled with ice add gin or vodka, lemon juice and rhubarb honey shrub. Stir and then top with soda water and stir again. Garnish with a lemon round. Cheers!
